Apple Oatmeal Cookies These cookies are loaded with fiber - apples, oats, raisins, dried apricots... And the recipe yields about 5 dozen cookies.
In a small bowl, stir together:
1 cup whole wheat pastry flour 3/4 oat flour 1/2 tsp salt 1/2 tsp baking soda 3/4 tsp baking powder 3/4 tsp cinnamon 1/2 tsp ground cloves 1/2 tsp cardamon 1/2 cup chopped walnuts (other nuts will do)
In a large bowl, beat together:
1/4 cup concentrated pineapple juice 1/2 cup vegetable oil
Beat in 2 eggs (to the pineapple juice mixture).
Stir in the dry ingredients and: 1 cup of rolled oats 2 large apples, peeled and chopped 1/2 cup raisins 1/2 cup dried apricots
Mix well.
Drop the cookie dough by the teaspoon about 2 inches apart onto a greased cookie sheet.
Bake at 350 degrees for 12-15 minutes.
